1/2 c. Raisin Bran
2 1/2 c. flour
2 1/2 t. baking soda
1 1/2 c. sugar
1/2 c. butter or margarine
1 c. warm water
2 large eggs
2 c. buttermilk (or 2 cups milk with 2 Tbls. vinegar, let stand for 5 minutes)
Combine raisin bran, flour, baking soda, and sugar in a large bowl. Cut in butter. Set aside.
In another bowl, combine warm water, eggs and buttermilk; mixing well. Add all at once to dry ingredients; stirring only until dry ingredients are well moistened. Spoon batter into prepared muffin cups, filling each 2/3 full. Bake in a 400 degree oven for 20 minutes, or until golden brown. Remove from oven. Let cool completely on wire rack.
Makes 2 dozen muffins
My kids and I LOVE these muffins. I think they are better if muffin mix sits in the refrigerator for a few days. It's nice to have something on hand to make a quick breakfast.
