Church Ladies Buttermilk Chocolate Cake

2 c. flour
2 c. sugar
2 sticks butter or margarine
4 T. cocoa powder
1 c. water
1/2 c. buttermilk
1 t. vanilla
1 t. cinnamon
1/4 t. salt
1 t. baking soda
2 large eggs
Frosting (Recipe below)

Preheat oven to 400 degrees.  Combine flour and sugar.  Heat butter, cocoa and water in saucepan; bring to a boil.  Pour over dry ingredients; mix.  Pour into 13 x 9 inch pan.  Bake 20 minutes.

Frosting:
1 stick butter or margarine
4 T. cocoa powder
5 T. milk
1 t. vanilla
1 c. chopped pecans
1 (16 oz) box powdered sugar
1/4 t. cinnamon

Before cake is done, combine butter, cocoa, and milk in a saucepan.  Heat until butter is melted.  Remove from heat, add remaining ingredients.  Keep warm.

I LOVE this recipe.  It's my all time favorite cake brownie recipe. 
I actually make this in a large jelly roll type pan.  They seem last a little longer.

Yummy Cake Brownies

2 c. flour
2 c. sugar
2 sticks margarine
3 T. cocoa
1 c. water
2 eggs
1/2 c. buttermilk (or use 1/2 c. milk combined with 1 t. vinegar)
1 t. soda
1 t. vanilla
1/2 t. salt
nuts

In bowl, mix together flour and sugar. In saucepan, melt margarine, cocoa and water-bring to boil 2 minutes. Pour over flour mixture. Beat eggs, buttermilk, soda, vanilla, and salt. This will be runny. Bake on a greased sheet. (I like to make this in a jelly roll style pan). Bake at 350 degrees for 30 minutes. Add nuts if desired.


Frosting:

1 stick margarine
2 T. cocoa
1/3 c. milk
1 lb. powdered sugar (4 c.)
1 t. vanilla

Melt margarine, cocoa, and milk. Bring to a boil. Pour over powdered sugar. Add vanilla. Mix well. Spread on top of brownies while hot.

*I also like to sprinkle chopped pecans on half of the sheet of brownies. We have those who like 'em, and those who don't. These are great for church functions or large crowds.
*We also like to eat these warm out of the oven with a scoop of vanilla ice cream. Yum!

Zucchini Brownies

A special thanks to Kara's Kitchen Creations for this wonderful recipe

1 1/2 cups sugar
3/4 cup oil
2 tsp vanilla
2 cups grated zucchini
2 cups flour
1/3 cup cocoa
1 1/2 tsp soda
1 tsp salt
1/2 cup chopped nuts (optional)

In your kitchen aid or mixer, beat sugar, oil, vanilla, and zucchini until well blended. Stir in the remaining ingredients. Spread into a greased 9x13" pan. Bake at 350 for 30-35 minutes or till toothpick comes out clean. Frost with chocolate frosting.

Frosting:

3 Tbsp melted butter
2 Tbsp cocoa
2 cups powdered sugar
2-3 Tbsp buttermilk (or milk)
dash of salt
1 tsp vanilla

Stir together butter and cocoa until it's smooth. Beat in remaining ingredients, adding buttermilk until it's the consistency you like.

I have to admit I was VERY skeptical about this recipe. Truth be told...I'm NOT a big vegetable eater...my family is...but not me! So when I first saw these I thought we'd give it a try. After all it is zucchini surrounded by chocolate right? So I gave it a go. We were excited to try this hot out of the oven. NOT a big fan! I thought it tasted too vegetable like. But just as I was going to throw them away the next day I decided to try it one more time. They were fantastic! They were so moist and not very vegetable like at all!..And to think I was going to throw them away!! You must try these.

Mint Brownies To Die For


I found this FABULOUS recipe from Kara's Kitchen Creations. Thanks Kara for adding an extra 25 lbs. I didn't need! Wink wink!

3 cups sugar
3 cups flour
3/4-1 cup cocoa
1 1/2 tsp salt
6 eggs
1 1/2 cups oil
3/4 cup milk
Combine all ingredients in order listed and mix till smooth. Pour into a well greased 15x10" jelly roll pan. Bake at 350 for about 20-25 minutes. Cool completely.

Mint Layer:
1/2 cup soft butter
4 cups powdered sugar
1-2 tsp peppermint extract (I use 2 because I like them really minty.)
2 Tbsp water (approximately)
Pinch of salt
A few drops of green food coloring
Beat till smooth and spread evenly over brownies. Chill for a few minutes to set.

Chocolate topping:
2 cups semi-sweet chocolate chips
6 Tbsp butter
Melt butter in glass bowl in microwave. Add chips and cook at 50% power, stirring every 30 seconds, until melted and smooth. Drizzle over mint layer. Chill for 1 hour.

*Holy smokes! I think I need to re-name this recipe "Brownies for a crowd"! This made enough for your whole ward! Too bad I almost ate the whole pan all by myself! The only thing I would do differently is ...I think I would cut the chocolate topping in half, and use milk chocolate instead of semi-sweet other then that...Simply to die for!

Peanut Butter Marble Brownies

4 ounces cream cheese, softened
1/2 c. peanut butter
2 Tbls. sugar
1 egg
1 pkg brownie mix plus ingredients to prepare mix

  • Preheat oven to 350. Grease a 9 x 3 inch pan and set aside

  • Beat cream cheese, peanut butter, sugar and egg in medium bowl with electric mixer at medium speed until blended..

  • make the brownie mix according to package directions. Spread brownie mix in the pan. spoon peanut butter mixture in dollops over brownie mixture. Swirl peanut butter mixture into brownie mixture with tip of knife.

  • Bake 30-35 minutes

Rocky Road Brownies


1 box chocolate cake mix
1/2 c. butter or marg. melted
1/3 c. water
1/4 c. packed brown sugar
2 eggs
1 c. chopped nuts
3 c. mini marshmallows
1/3 c. choco. syrup


1-Heat oven to 350 degrees. Grease a 13 x 9' pan

2- In a large bowl, stir together half of the dry cake mix, butter, water, brown sugar and eggs mix until smooth. Stir in remaining dry cake mix and nuts. Spread in pan. Bake fo 20 minutes (25 min. for dark or non-stick pan) Sprinkle with mini marshmallows.

3-Bake 10-15 minutes longer or until marshmallows are puffed and golden. Drizzle chocolate syrup over bars. Cool completly, about 1 hour. Cut 6 rows x 4 rows. Makes 24 bars.

I, the dessert queen must say got a little sick these. Don't get me wrong, they were great, but I felt like we were eating rocky road brownies for months. They just seemed to be never ending. This is one that you should share left overs with neighbors!
