Erika's Penne Pasta Casserole

This recipe is a mixture of THIS recipe and THIS recipe with my own added touch.

*1 Package of Penne Pasta, Cooked and Drained
*1 Pound Sausage, or Hamburger Browned and Drained
*1 Jar of your favorite Pasta Sauce (about 2 cups)
*Dried Basil (to taste)
*Garlic Powder (to taste)
*Grated Mozzarella Cheese
*2 Eggs
*1 small Container Cottage Cheese
*1/2 med. yellow onion
*1 tbsp e.v. olive oil
*2-3 cloves minced garlic

Get a pot of salted water going. Over low heat in a large skillet, add some olive oil, onion, garlic and a pinch of salt and sweat / simmer that until translucent.
Add the ground beef and/or italian sausage and brown. Drain it, return to pan with onion mixture. Add spaghetti sauce, and cook on low stirring occasionally for about 10-15 min. Add chopped basil and garlic powder. You may want to alter the flavor with salt, pepper and sugar depending on your spaghetti sauce.
When water boils, add the penne and
UNDERCOOK it. (Because it will continue to cook in the oven).
Combine Cottage Cheese, Eggs, and mozzarella
Cheese in a medium mixing bowl.
Combine spaghetti sauce mixture, cottage cheese mixture and noodles together in a 9 x 13” baking dish.
Top with cheese, bake at 350F for about 30-45 minutes. You might want to cover lightly with aluminum foil until the last 10 minutes.

Hot Fudge Pudding Cake*

1 3/4 cups white sugar
1 1/2 cups all-purpose flour
10 tablespoons unsweetened cocoa powder
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1/2 cup butter, melted
1 1/2 teaspoons vanilla extract
3/4 cup packed brown sugar
1 2/3 cups hot water

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, stir together the 2/3 cup sugar, flour, 5 tablespoons of the cocoa, baking powder and salt. Blend in milk, melted butter and vanilla; beat until smooth. Pour batter into one 9 inch square baking dish.
  3. In separate bowl, stir together the remaining white sugar, brown sugar and the remaining cocoa; sprinkle mixture evenly over batter. Pour hot water over top. Do not stir!
  4. Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes or until center is almost set. Let stand for 15 minutes. Then spoon into dessert dishes, spooning sauce from bottom of pan over top.

Army Rolls*

1/2 c. warm water
2 T. yeast
1 t. sugar
Combine and set aside

7 c. flour
1/3 c. sugar
2 t. salt
1 c. instant powdered milk

Combine in large bowl. Make an indentation in the middle. Fill indentation with the following:

2 c. warm water
1/2 c. oil
2 beaten eggs

Also, add yeast mixture at this time. If it is too sticky, you may add flour. Let rise for 45 minutes or until doubled. Form into rolls and let rise 30 minutes. Bake at 350 degrees for 20 minutes or until light brown.
These are wonderful rolls! They are great for a potluck or church functions because they make so many. This made nearly 2 pans of rolls.

Manti Turkey*


2 c. sprite or 7-up
1 c. soy sauce
1 c. cooking oil
1/4 t. garlic powder
1/2 t. horseradish sauce
Mix together; place in ziploc bags. Marinate turkey (or chicken) pieces 6 -24 hours. Refrigerate. This does get saltier the longer the meat is in the marinade. We usually let it marinate for 6 to 12 hours. Place on BBQ and grill until done.

Pick Me Up Punch*

1 (46 oz.) can pineapple juice
3 c. apricot nectar
1 can frozen lemonade concentrate (make according to the directions on the can)
Ice

Shake pineapple juice and pour into pitcher. Add apricot nectar and lemonade. Pour over ice in glasses and serve.

I thought this title was appropriate for this drink! Yummy.

Olive Garden Breadsticks*


Recipe from ABC News

Ingredients

  • 2 tablespoons granulated sugar
  • 3/4 teaspoon active dry yeast
  • 1 cup plus 1 tablespoon warm
  • water (105 to 115 degrees F)
  • 16 ounces bread flour (3 cups)
  • 1 1/2 teaspoons salt
  • 1/4 cup (1/2 stick) butter, softened
  • On top:
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic salt

  • Cooking Directions

    Dissolve the sugar and yeast in the warm water in a small

    bowl or measuring cup and let the mixture sit for 5 minutes,

    or until it becomes foamy on top.

    Combine the flour and salt in a large bowl. Use the paddle

    attachment on a stand mixer to mix the softened butter into

    the flour. If you don't have a stand mixer, use a mixing spoon

    to combine the butter with the flour. When the yeast mixture

    is foamy, pour it into the flour mixture and use a dough hook

    on your mixture to combine the ingredients and knead the

    dough for approximately 10 minutes. If you don't have a stand

    mixer, combine the ingredients and then knead the dough

    by hand on a countertop for 10 minutes.

    Place the dough in

    a covered container and let it sit for 1 to 1 1/2 hours, until it

    doubles in size. When the dough has doubled, measure out 2-ounce portions

    and roll the dough between your hands or on a countertop

    to form sticks that are 7 inches long. Place the dough

    on parchment paper-lined baking sheets, cover and set aside

    for 1 to 1 1/2 hours, or until the dough doubles in size once

    again.

    Preheat the oven to 400 degrees F.

    Bake the breadsticks for 12 minutes, or until golden brown.

    When the breadsticks come out of the oven, immediately

    brush each one with melted butter and sprinkle with a little

    garlic salt.

    Makes 12-13 breadsticks

    Sausage Stars


    Original recipe from Mommy's Kitchen

    1 - Package Original Hidden Valley Ranch Dressing Mix(prepared according to package directions)
    1 lb Jimmy Dean or Owens regular sausage, browned & drained
    1 - 8oz Bag Kraft Mexican 4 Cheeses
    1/2 - cup green or red bell pepper (optional)
    1 - package Wonton wrappers or egg roll wrappers


    Brown sausgae and drain off any grease, set aside. Mix ranch dressing according to package directions. Mix the sausage, prepared dressing, bell pepper (if desired) and cheese together and chill for 30 minutes. Place won ton wrappers in a lightly greased muffin tin. Bake 5-7 minutes until lightly golden brown. Watch them carefully so they dont get too brown. Remove from oven and let them cool a bit. When cooled add a couple tablespoons full of sausage mixture. Return to the oven and bake 5-7 minutes until cheese melts. Let cool just a bit and serve.I added a little more ranch then it called for because the mixture seemed a little dry.
    We made these for our New Years Eve party this year. They were yummy! Just DON'T serve them cold!!!

    Skillet Potatoes

    Recipe from Mommy's Kitchen
    4 or 5 medium sized potatoes, sliced thin 1/8 inch
    1 - 5 oz can evaporated milk
    2 - Tablespoons heavy whipping cream
    3 - Tablespoons of butter
    1 - 2 Tablespoons minced garlic
    1/4 onion, sliced
    salt/ pepper to taste
    Preheat oven to 350 degrees. Peel and slice potatoes into 1/8 inch thick slices. {Remember...the thicker you slice the potatoes the longer they take to cook.} In a heavy oven safe skillet melt butter with garlic, sliced onion, and salt and pepper. Add the potatoes and cook until the potatoes are coated with butter and are turning brown on the edges. Add evaporated milk and cream and continue to cook until the milk starts boiling. Place the whole skillet of potatoes into the oven and bake for 20 minutes. Adjust cooking time for the thickness of the potatoes. {I cooked the potatoes for an additional 10 minutes so the potatoes would be crispy on top}. Remove from oven, cool and serve right from the skillet.
